Eurostar has announced the appointment of world-renowned Michelin-starred chef Raymond Blanc as its Culinary Director. This exciting gastronomic partnership will bring Blanc’s passion for sustainable and seasonal food to Eurostar’s Business Premier passengers.

Passengers Crave Quality Cuisine and Sustainability

Eurostar recently polled customers on what was important to them during their journey. Alongside more traditional considerations like price and travel times, over two-thirds stressed sustainability and over one-third revealed food was an important factor. With these thoughts in mind, Raymond Blanc is collaborating closely with Eurostar’s catering suppliers to help transform travelers’ perceptions of on-board catering.

About Chef Raymond Blanc

Raymond was born in a tiny rural village near Besançon, in eastern France. His two greatest inspirations were the terroir of the Franche-Comté region, and his mother, the formidable Maman Blanc, who lovingly created family meals bursting with fresh, local and seasonal flavors.

He has run his two Michelin-starred restaurants, Le Manoir aux Quat’ Saisons in Oxford, England for over 30 years, and is the founder of a chain of French-cuisine restaurants, Brasserie Blanc, around London and the UK.

Chef Blanc has been awarded an OBE by the Queen and a lifetime achievement award from the food industry.

The Approach to Menus

Chef Blanc strongly believes that ingredients should be sustainable, seasonal and responsibly sourced and Eurostar shares this passion.

He has designed the winter menu to combine rustic, traditional dishes with a fresh and creative approach. Working with three local suppliers in France, England and Belgium, he has developed 18 different menus, six from each country of departure. The Winter Menu will be available through April 2013.

Commenting on his appointment, Raymond Blanc said; “As a chef, I’m always searching for the purest ingredients, striving to ensure that everything I use is traceable and responsibly sourced. I’m delighted to work with Eurostar, which shares these same values and was the first transport provider to join the Sustainable Restaurant Association. Together we’re working to change the perception of on-board cuisine and serving sustainable and locally sourced food which is at the heart of our new Business Premier menus.”
